Hi, I`m in the same situation as you, I have an intel mac and got a windows partition using bootcamp. Atm I am just running and playing on my server in windows. However, a program called "crossover" lets you launch .exe files.,tho slow. you can try and launch your server in your windows partition through mac, then edit realmlist in mac and start wow. I haven`t tried it but gl. :)

Well, I did bump over something but haven`t really given it much thought yet. it allows you to run MaNGOS in mac but I'm not quite sure how to work it yet. You can check out the thread at mmowned. (I`ll get the link in a sec sorry :P)
EDIT: looks like theres a new one for antrix too, http://www.mmowned.com/forums/how-create-wow-server/27168-mac-antrix-apple-script-beta.html
Gonna check this out later. Here is the mangos one: http://www.mmowned.com/forums/how-create-wow-server/27021-mac-mangos-apple-script.html
have fun

I have made a guide of this now, however it is only for 2.0.12 and intel. Check it out on this forum
